“Acquasale” is a popular, ancient recipe of Puglia. In the past, it was the food of the farmers; it was prepared with the natural products of the soil: poor ingredients, but healthy and nutritious. This food allowed the farmers a hard work during the whole day in the fields. This recipe was a classic summer dish, very simple and easy to prepare.
- Stale bread
- Fresh red tomatoes
- Extra virgin olive oil
Soak the bread in water to make it soften, wring out the bread to remove excess water, cut the tomatoes and rub on the bread, drizzle with extra virgin olive oil, salt and oregano. You can also add onion slices, olives and aubergines.
It can be served either as an appetizer or main dish.
