“The pancotto” is a recipe of humble origins; in the peasant tradition, it was prepared to use the dry stale bread, eaten in place of paste. It is very simple to prepare, you need only a few ingredients. The pancotto is a perfect soup to be served hot as a first course. It is also served as a second dish with meat and vegetables.
- Stale bread
- Broad beaus
- Red tomatoes
- Extra virgin olive oil
Boil the water and add the beets, potatoes, garlic, broad beans, tomatoes. Wait till everything is cooked.
Drain the contents of the pot and mix it with the bread and extra virgin olive oil. Put the pancotto in the dish and drizzle with a little more extra virgin olive oil, and red pepper.
